Freedom Fries

as many as potatoes as you want
corn oil
deep fryer
something like a strainer spoon or wire ladle


put a lot of oil in a pan or pot and turn on very very very very VERY high heat.
while that is heating up, slice potatoes into large, fry like...slices.

once the oil is scalding hot (rorschach in prison, for all you, maybe not calvin, you might have been asleep), carefully place the potato slices with the wire ladle.
let these bubble in for a couple of minutes, not too much. stir occasionally so they don't clump together

allow half fried potato slices cool for a good 10 minutes or until you can touch them without looking stupid, in the meantime, you can make more fries! :D

when the slices are fully cooled, put them back in the hot oil and let them brown. you'll want them to be pretty brown.

lay a paper towel or two on a large plate, put the fries on the plate, sprinkle some salt on them and you're good to go!

these are effing delicious, especially with fried fish and homemade tartar sauce

the picture i took was probably 1/5 of the fries i ate in that sitting.

i neither condone nor condemn the practice of battering up bacon and putting them in the deep fryer.
