
Chicken and Broccoli
this is one of my favorite dishes my mom makes at home
1 chicken breast
2 heads of broccoli
soy sauce
cooking rice wine
garlic powder
white pepper
cornstarch
slice chicken into thin pieces, place into a bowl. add 3 splashes of soy sauce and 1.5 splashes of rice wine. add 2 pinches of garlic powder and 1.5 pinches of white pepper. add about 2 teaspoons of cornstarch.
mix the chicken and seasoning mix until thoroughly coated. there should be just a little bit of liquid at the bottom of your bowl. in other words, it should be wet, but not drenched. let this sit anywhere from 5 minutes to an hour, doesn't really matter
cut flowers off broccoli into bite sized pieces. you can use the stalk, too, if you want. wash in colander and dry as much as possible.
add actually quite a bit of oil to a wok and saute the broccoli on high heat. cook for only about 5 minutes. pour about 1/3 cup water, sprinkle salt, lower to medium-low heat, cover, and let steam for about 5 minutes. put on serving platter when done.
put a little bit of oil into a pan and saute chicken on high heat. initally, don't move too much, you want to get the seer marks. when the chicken is almost cooked, add 1/6th cup water to create and au jus. when finished cooking, place ontop of broccoli to make it look pretty.
serve with white rice and an over easy egg.

if you add too much anything when marinating the chicken, you can rinse the chicken off and try again.
if you're going to use the broccoli stalks, make sure you peel a great deal of skin off of them because they taste bitter. the inner core is the best
have a runny yolk over easy egg, break the yolk over your rice and pour some soy sauce on the egg and rice. you will go to chinese hell for pouring soy sauce on white rice, but its worth it, seriously.
