
Chili
Ingredients
1-2 pounds ground turkey
2 green bell peppers, diced
2 white onions, diced
5 cloves garlic, minced
1 tbs. ground cumin
1 tbs. dried oregano
1/4 tsp. cayenne pepper - do not add more than this
2 bay leaves
1 can 28 oz. crushed tomatoes
1 can 15 oz. black beans
1 can 15 oz. kidney beans
1 can 15 oz. refried beans
1 can 4 oz. diced green chiles, rinsed
2 whole or 6 slices jalapeno, rinsed
Put the black and kidney beans in a strainer and let the juices run out. Cook the brown turkey in a pan. Note that ground turkey doesn't keep its form, so drop little balls of it, about an inch diameter to make kinda like meatballs.
In a very large pan or wok, dump the bell pepper, onion, garlic, cumin, oregano, cayenne, bay leaves, and cooked turkey until the vegetables are somewhat soft. To quote Kevin Malone,
"The trick is to undercook the onions, everybody is going to get to know each other in the pot." Add in the tomatoes, beans, chiles, and jalapenos and bring to a boil. Reduce the heat to a low simmer, cover, and stir every 10 minutes or so. Let this simmer for 45 minutes to an hour. It's best to cook the day before so all the flavors can mix and mingle.
