
Herby Pork Tenderloin
1. Buy one package of tenderloin (usually 2 tenderloins) with no marinade included. Should be around 1.5-2#
2. Find out what spices/herbs you have lying around. Chances are, you can mix them to make an equally delicious thing.
3. Remove silver skin from your tenderloin. This is the whiteish skin that coats parts of the tenderloin. Use a small knive (the one pictured is a fine example) and make a slit under the silverskin, then pull hard, using the knife as needed, to peel away that bit of skin. repeat until most of the skin has bee removed.
4. In a ziploc bag (or a bowl) add 1/4c each of soy sauce, neutral oil (peanut, canola, vegetable, not olive), worcestershire sauce. then add 1tsp each of thyme, sage, garlic powder, onion powder, ginger, rosemary, salt, and pepper. Mix to combine, then stick the tenderloins in there. Put all this in the fridge for about 2 hours.
2 hours already? Then preheat oven to 350 degrees. Remove your tenderloins, place on a rack in the oven with a pan below to collect juices. At this point I rubbed a bit of extra rosemary on the tops of the loins, just for kicks. Cook for 35-40 minutes, do not cut until just before serving for maximum delicious. We ate this with some steamed zucchini.
