Breaded Turkey Breasts

2 or 3 turkey breast cutlets
1 egg, beaten
1/2 cup bread crumbs (any flavor, if they're plain, season with garlic, oregano basil, salt, pepper or whatever your heart desires)

get two large plates out plates out. in one plate, crack and scramble the egg; in the other, put in your bread crumbs and whatever you decided to add in it.

pour enough oil to cover the bottom of a pan and put it on high heat.
dip the turkey cutlets in the egg and wait for your oil to be hot enough. one at a time, dredge the egg-dipped cutlets in the bread crumbs and gently place them in the pan. let these cook for a good 4 minutes on each side or until brown. when fully cook, place in a paper towel to sop up extra oil

serve over pasta with your third favorite marinara sauce. i guess you could put these in sandwiches, too...

notes:
when the cutlets are cooking, try not to move them around too much or else you'll get bald patches as seen on the front cutlet in the picture

yeah, not the prettiest dish, but i wanted to do something relatively quick with turkey cutlets because they look really good at trader joes.
