
5 Spice Chicken
ingredients:
half of a chicken (cleaned, i'll go over that later) or even just chicken parts. it's all good, man
light soy sauce
5 spice powder
corn oil
preheat oven to 350 degrees eff.
place the chicken on a plate and give it a soy sauce shower. make sure you pour it over all the areas, the inside, under the wing, and between the thigh and leg. coat and rub in the 5 spice powder next. be liberal with it, srsly.
okay the chicken should have a brown tint to it, that's good.
one more thing, keep the soy sauce and 5 spice mix on the plate, you'll want it.
line a deep baking tray with tin foil..its easier clean up and you'll want to save the juices. put some oil in it so the chicken won't stick.
place the chicken, inside of the chicken down, in the tray and into the oven for 30 minutes. flip chicken over and bake for another 20 minutes. after that, flip the chicken again and go for like 25 minutes-ish. remember that soy sauce and 5 spice, now is the time to pour that in and cook for a little. you'll know the chicken is done when the inside of it runs clear.

cleaning a chicken the way my mum taught me:
take all the guts out of the chicken. with a pair of kitchen scissors, cut down one side of the entire spine. okay, cut in the middle of the chicken, you can pick whatever side of the breast plate you wanna cut through. now, trim off excess fat and skin you don't want. rinse the chicken. put the chicken in plate or colander in the sink. coat the chicken (even the inside) in salt and rub the salt in. it's kinda like prepping meat for bbq. be generous with the salt as this is what is cleaning the chicken; it will act as a defatting agent and make marinating better. give the chicken a final rinse and you're good to go. you can totally freeze a chicken for a while in this state.
this dish goes great on rice. the juices at the bottom goes great as a gravy or au jus for the chicken as well as another way to saturate your white rice and send you to chinese hell.
